Stir-Fried Edamame with Miso
The base. Buckwheat noodles is a great substitute for whole-wheat spaghetti
Substitute whole-wheat spaghetti or your favorite grain for the buckwheat noodles.
Chinese flavor. Add in broccoli, some snow peas, shiitake mushrooms for the cabbage, carrots, yellow pepper, water chestnuts, and edamame.
The heat. Use miso paste instead of sriracha for your spiciness cravings.
Mushrooms over Tarragon-Lemon Chicken
Southwestern twist. Toss some onions, black beans and some green chiles. Add lime and cilantro.
Salad. Slice the cooked chicken, put it on shredded red cabbage, add thinly sliced apples, scallions and Swiss chard. Better served with maple syrup.
Soup. Chop the cooked chicken breasts, add them to a pot of veggies or chicken broth, add bok choy, sprouts and sliced mushrooms.
Greens, Beets, Walnuts and Feta Farro
The grain. Use quinoa, freekeh, black rice, buckwheat, or millet instead of farro.
Mediterranean way. Use raw spinach, shallots, and oil-soaked sun-dried tomatoes instead of kale, sprouts and brussels. Use black olives instead of the beets. Add with fresh basil leaves.
Sweetness. Use shaved carrots and thinly sliced fennel and radicchio instead of brussels sprouts and kale. Use fresh orange segments instead of the beets.
